  2. Rinse with water. You can add salt after rinsing and start frying.
  3. If you want it fried soft, soak the yam pieces overnight after rinsing it. After, drain the water and add salt to the pieces.
  4. After seasoning, place a frying pan on medium heat. Add enough oil to deep-fry the yams (about 1.5 - 2 inches deep).
  5. When it is hot, place the yams in the oil, as much as the pan can accommodate.
  6. Fry until it is a light golden-brown in colour, or until the edges are turning golden-brown. Scoop them from the oil into a sieve.
  7. It is important to ensure the heat is not high, so the yam can cook on the inside. You don't want fried yam which is brown outside but raw at the center.
  8. When all the yam is fried, make your fried pepper soup to your taste.
  9. I made mine by pouring the oil to a pan and adding pepper, water, salt and locust beans. Let it cook on high heat for about five minutes. Then delicious pepper soup is ready. The locust bean (irú) was the only addition to my stew aside from salt.
